Raw buckwheat groats are buckwheat seeds that have been taken out of their husk (the tough outer shell). Although buckwheat husks contain nutrients they are fairly bitter with a gritty texture and challenging to digest. Therefore, most people prefer buckwheat groats, but they must be soaked in water or simmered to soften.

Sprouted buckwheat is unhulled (husks still intact) buckwheat that has germinated. Unhulled buckwheat is soaked in water for a few hours before being drained, rinsed and left to start sprouting. The seeds are rinsed again and sprout the correct amount after about 20-24 hours.

Once sprouted, the buckwheat seeds can be cooked, baked, or frozen to keep them fresh. They can also be dried and milled to make Organic Buckwheat Flour.

Eating organic sprouted buckwheat is incredibly nutritious. However, it takes a long time to germinate and only remains fresh in the fridge for a few days. Therefore, although it is one of the healthiest options, it may not be realistic for everyone.

Unhulled buckwheat is when the buckwheat seeds are still inside their husk. You need unhulled buckwheat to make sprouted buckwheat. Hulled buckwheat is when the husk has been removed. The seeds can then be ground into things like wholegrain buckwheat flour.

Puffed buckwheat is when the grain has been put under high heat until it ‘puffs’ up. Popcorn is a common form of puffed-up grain. Buckwheat doesn’t fluff up as much as popcorn, but it does expand.
